Enchaînement carries a pronounced final consonant straight onto the next vowel: elle aime becomes e-llaime, one smooth group. Optional liaisons work the same way and lift your register — the level of formality your French projects. Optional means exactly that: you choose, and the choice is heard. In ils sont allés au marché, the final t of sont may be carried onto allés — ils son-tallés in a presentation, ils sont / allés over coffee, and neither is a mistake. Same in un plat trop épicé: link the p of trop onto épicé and you get tro-pépicé, one notch more formal than leaving the two words apart. Make these links when you want to sound careful, drop them when you want to sound relaxed. Record the models and glue the words.
