Les définis ne bougent jamais

The article system under negation has exactly two behaviours, and by now you have met both edges of the first. Here is the full map: only the indefinite/partitive series (un, une, des, du, de la) reduces to de. The definite series — le, la, l', les — never moves. Not under pas, not under jamais, not under plus:

• Je n'aime pas le café.
• Elle ne supporte pas le bruit des travaux.
• Il ne connaît pas la réponse.

The minimal pair that locks the whole system in place is two sentences apart:

1. Je ne bois pas de café. — boire du café: partitive, so negation reduces it.
2. Je n'aime pas le café. — aimer le café: definite (coffee as a category), so negation leaves it alone.

Same noun, same negation — the article you started with decides everything. So the practical reflex is: before writing the negative sentence, recover the affirmative one. If it contained du / de la / des / un / une, write de. If it contained le / la / les, copy it through untouched. The items below make you run that recovery step on verbs of both families.

Going further

Why the rule exists. A definite article does not measure an amount; it points at something already identified — a whole category (le café as such) or one known thing (la clé de la porte). Negation removes an amount. A definite has no amount to remove, so it passes through untouched — and so do the other pointing words, the possessives and demonstratives.

Minimal pairs. One change between the two sentences, and what it does:

From Russian and English. Russian has no article, so я не пью кофе and я не люблю кофе look identical (кофе does not decline; with a noun that does, Russian sometimes hints — не пью вина against не люблю вино — but not reliably). English does not help either: I don't drink coffee and I don't like coffee have the same bare noun, and an English bare noun used for the whole category (I like coffee) is a French definite (j'aime le café). The only reliable method is the one on this page: rebuild the French affirmative first.

The complete rule. Under any negation, three series never reduce: the definite (le, la, l', les), the possessive (je n'ai pas mon téléphone) and the demonstrative (je ne prends pas cet avion). A number does not reduce either when it is really a number: je n'ai pas deux voitures, j'en ai une. Only the indefinite and partitive series becomes de (GR-01).
